ESPECIAL CUCUMBER SALAD WRAP RECIPE

INGREDIENTS

  • 6 Simply Especial Classic Navy Bean Tortillas
  • 2 whole, peeled cucumbers
  • 1/2 large red onion
  • 1 pint cherry or grape tomatoes
  • 8 oz slab of feta cheese
  • 1 heart of romaine lettuce

For the vinaigrette:

  • 2 cloves garlic, peeled
  • 1/2 cup extra virgin olive oil
  • 1 lemon, juiced and zested
  • Dried whole oregano leaves to taste (about 1 tbsp)
  • Salt and pepper to taste

DIRECTIONS

Chop peeled cucumber and red onion into half moons, about 1/2 inch pieces. Cut tomatoes into halves, chunk the feta into pieces. Put into large bowl. In a blender, add the vinaigrette ingredients and blend on high for 15 seconds or until smooth. Adjust for taste with salt and pepper, then add to the cucumber mixture. Chop lettuce into 1 to 2 inch pieces and add to fill each tortilla. Add marinated cucumber salad onto the lettuce, wrap and serve.
